This 65 miler looks fun, http://content.sierraclub.org/outings/national/brochure/kayak-or-canoe-way-down-upon-suwannee-river-georgia-and-florida-0, but a full week mght just be too long for it.

Long Distance Paddling (aka Pipe Dreams)

Obviously, the S2S - The Chattahoochee River from Source to Sea is my driving goal, but one can dream even more and imagine taking on other long distance epics.  The list at http://www.wengerna.com/blog/5-long-distance-paddle-routes/ gives some of the well-known long-distance paddling adventures.  Other pipe dreams could include any of the following.

Trinity River

As the wikipedia article states, the Trinity River is 710 miles long stretching from just under the Red River (i.e. Oklahoma) down to the Trinity Bay which is part of Galveston Bay (i.e. the Gulf of Mexico).  I'd imagine starting right at the tip of the official Trinity River in NW Dallas and taking it all the way down to the bays.  These fellas had a short little adventure near the top of my suggested route; http://dallastrinitytrails.blogspot.com/2012/11/exploring-trinity-river-by-canoe.html.
